Bangkok Egg Salad

Description

A unique salad from Thailand. This version if filled with fish sauce and aromatic flavors. Nothing is boring about this flavor packed super food!

Ingredients

  • 100 g Cashews

  • 4 eggs

  • Seed oil q.s.

  • 2 Shallots

  • 1 Onions

  • 1 mint sprig

  • 1 celery stalk with leaves

  • 2-3 chili (dry or fresh)

  • 1 tbsp brown sugar

  • 2 tbsp fish sauce

  • 2 tbsp lime juice

Directions

1. Take a medium-sized pan, pour the oil and slowly fry the cashews until they are golden brown. Fry the eggs one by one in the pan and leave to cool.

2. Meanwhile, using a pest mortar fine chili pepper, lime, fish sauce and sugar. Finely chop the shallots, the onions and the celery.

3. Cut the eggs into cubes of 2-3 cm each and place them in a bowl. Add to the bowl the shallots, spring onions, mint, celery, the mix previously prepared in the mortar, and the cashews. Mix well and serve.
