Tzatziki, it's a universal Greek dip/sauce/condiment that appears everywhere and for everything! It's simple to make, will last for days, and tastes absolutely amazing!
450g Greek yoghurt
4-6 crushed garlic cloves
3 tbsp olive oil
3 tsp lemon juice
4 tsp chopped or dried mint
1 tsp salt
Pepper to taste
1. In a medium bowl, coarsely grate the cucumber. Drain the grated cucumber through a sieve, use the 1/2 tsp of salt to help draw the water out.
2. Allow cucumber to drain for about one hour.
3. Combine all the ingredients, mixing thoroughly.
4. For the best tasting tzatziki, leave in the fridge overnight so the flavors can mellow and infuse.
