Greek yoghurt and olive oil cake
A great, simple, and delicious cake that is easy to make, and even easier to eat. Basic ingredients, easy to follow recipe, and makes at least 12 servings. Ideal for any time, parties, home entertaining, or even just for yourself as a reward.
For the Cake:
3/4 cup extra virgin olive oil
2 eggs at room temp
Zest of one lemon
1/4 cup of fresh lemon juice
1 cup plain Greek yogurt
1 cup super fine sugar
2 cups all-purpose flour, sifted
3 teaspoons baking powder, sifted
For the Icing:
1 cup icing sugar
1 tablespoon lemon juice
1/4 teaspoon orange blossom water
1. Preheat the oven at 160C/325F.
2. Mix oil, eggs, lemon juice, yoghurt, and sugar until all ingredients are combined.
3. Sift the flour and baking powder in parts into the olive oil mix, gently fold the ingredients until they are combined.
4. Bake for 45-50 min, check with a skewer, should come away clean when done (lovely golden color).
5.When cool, mix icing ingredients together and drizzle until happy with appearance.
