Maqlouba مقلوبة which means literally "up side down" or you can call it rice cake is a traditional dish which is very popular in the Arab region, the plate is layers of meat, eggplants, potatoes and rice usually serves with yogurt and Arabic salad.
1 big Eggplant
500 grams Minced meat
2 TSP olive oil
1 red onion
2 garlic cloves
2 cups Basmati Rice
3 cups chicken stocks
1 TSP Turmeric
1 TSP Cinnamon
1 TSP SaltPinch of nutmeg
½ TSP pepper
Nuts Coriander for serving
1.Preheat the oven to 200C and leave it for 20 minutes.
2.Cut Eggplants and Potatoes into rounded slices and place them on a plate in a single layer, put a bit of olive oil and put in the oven for 10 minutes.
3.In a big pot, put 2 TSP olive oil with onions and Garlic until onions are caramelised.
4.Then add the minced meat and then add on top of it pepper, Cinnamon, Nutmeg.
5.Once the meat is done, place the eggplant and the potatoes on top of the meat.
6.Rinse the basmati rice and place it on top of the vegetables and meat.
7.In another pot, add the stocks with Salt, Cinnamon and Turmeric.
8.Add the stocks on top of the Rice and leave them on high heat until boiled, then put it on medium heat for 30 minutes.
9.Once completed, turn it Upside down and then put nuts and coriander for serving
