Arroz con Coco
This rice recipe is one of Colombian favourites, specially around the coastal regions. Perfect to accompany many dishes, especially like Posta negra cartagenera and fish.
2 pints of White Rice (you can use American Long Grain)
1 coconut peeled and grated
1 cup or can of coconut milk
1/2 tsp minced garlic or garlic paste (Optional)
3 pints of water
1 .Grate the coconut and press to obtain its milk.
2. Divide the milk into 3 parts after straining 3 times.
3. Reduce one part of the milk until it caramelizes in low heat.
4. Add the rice, and the remaining two milks, add salt and let cook until rice is done
