The andean-nouvelle cuisine was a big gastronomic invention in Peru at the begining of 21th century. Products like quinoa, amarath, alpaca started to be the main characters in the plates. This dish was executed changing the main ingredient of a traditional risotto with the quinoa, an ancestral super nutritious grain used by the incas.
